Booza Ice Cream

Hand made ice cream pettit fours. Booza is a delicacy of the Levant since the 1800's. At the Levantine souk (markets) this unique ice cream is pounded to the right consistency with large wooden sticks and served with lashings of pistachios. Served here without the theatre of pounding, this Booza is hand made with authentic ingredients Sahlab and Mastica. Sahlab- the ground roots of the orchid Orchus mascula and Mastica- the gum from the mastic tree, combine to give this ice cream the texture and flavour that makes it so remarkable. Individual balls of ice cream to delight the senses.
