Brasserie Bread - New York Rye

We are pleased to announce a new organic sour dough from Brasserie Bread, the New York Rye.

Made famous by New York 's Jewish community, the New York Rye is a particular version of rye bread that is distinguished by a high proportion of wheat flour in the dough, giving the bread a light crumb and milder flavour.

The secret to the typically dark brown crumb colour is dark molasses and bitter dark cacao powder. A delicious crust is the result of the long fermentation process at ambient temperatures combined with a very high baking temperature.

BRASSERIE BREAD

Their very first batch of sourdough bread was baked back in 1996 when the owners, Tony Papas and Michael Klausen decided to make great bread for Sydney and never compromise the quality. They baked 12 loaves a day then and the plan was to build a bakery that would sell thousands of sourdough loaves a day at the same quality. And they did! Brasserie sourdough is organic and naturally delicious!

Today Brasserie bread is still dedicated to baking great bread for school lunchboxes and dinner tables. Eaten simply with good butter, it's a taste that lingers long after the last bite has been swallowed.

Brasserie Bread wins 'Champion Sourdough' at the 2011 RAS Fine Food Show

Brasserie Bread's organic sourdough range emerged as the biggest winner at the 2011 RAS Fine Food Show. In addition to winning the coveted Championship Loaf and Gold Medal for its 1kg food service sourdough 'the Boulot', the New York Rye and Baker's Round took home Gold Medals, while the Batard, Country and Quinoa & Soya were awarded Silver Medals.

In Pastry, the Brasserie Bread Croissant won a Gold Medal for the third year in a row, while the Praline Croissant was awarded a Silver Medal. Bronze Medals were awarded to the ever-popular specialty loaves, the Sour Cherry, Olive & Rosemary and the Rustic Ciabatta.

In total, Brasserie Bread won a total of 4 Gold Medals, 10 Silver Medals and 10 Bronze medals across their entire product range of bread, pastries and cakes.

The RAS Fine Food Show Awards

For those who may be wondering what the RAS Fine Food Show is, RAS stands for the Royal Agricultural Society of NSW. Established in 1822, it promotes Australian agricultural excellence and education, celebrating

innovation through events and competitions such as the Sydney Royal Easter show, and the Sydney Wine, Dairy and Fine Food Shows.
