Blueberry & Buttermilk Pancakes

Preparation: 10 minutes; Serves: 6
  • 1 1/2 cups self-raising flour
  • 2 tbs castor sugar
  • 375ml buttermilk
  • 1 tbs orange zest, grated
  • 1 egg lightly beaten
  • 1 tbs butter, melted
  • 1 punnet of blueberries
  1. Place flour in a bowl, add sugar, buttermilk, egg and butter. Beat with a wooden spoon until batter is smooth.
  2. Add blueberries and orange zest and stir until combined.
  3. Pre-heat a non-stick pan to medium heat. Place a spoon full of batter into the centre of your pan when bubbles flip and cook for 1-2 minutes or until golden brown.
  4. Serve with ice cream and maple syrup!
