Try Rice Bran Oil instead of olive oil to fry chicken pieces

Rice bran oil has an appealing nut-like flavour and withstands higher heat and thus will not "spit" as much.

 
 
 
 
 

Parmesan Chicken

  • Chicken breasts
  • Finely grated parmesan cheese from the Thomas Dux deli counter
  • Egg whites, lightly beaten
  • Olive Oil
  • Potatoes, tomatoes and green salad
  • Salt and pepper
  1. Slice the chicken breast pieces horizontally so that they are thin but not too thin.
  2. Dip and cover them in plain flour.
  3. Dip and cover them in the egg white.
  4. Throw them onto a pile of finely grated Parmesan and cover all over.
  5. Place them in a frying pan of hot, hot, hot olive oil (stand back and mind the spitting) and turn when crispy.
Serving Suggestion:
Arrange on a bed of creamy mash potatoes or pasta, with sliced tomatoes and garnish with olive oil, salt and pepper. Serve with your favourite mixed green salad.
