Brussels Sprouts

Brussels sprouts are closely related to cabbage and broccoli.

How to buy

Choose fir, compact sprouts with bright green, blemish-free leaves. In general, smaller are sprouts sweeter and more tender.

How to store

Store unwashed in a plastic bag in the crisper section of your fridge for up to three days.

How to cook

Remove loose leaves. Wash sprouts in cold water. Trim a small amount off the base of each sprout - you can also cut a cross into the bases to ensure they cook evently.
Cook in salted boiling water for 3-5 minutes or until just tender. Drain. Toss with butter and chopped fresh dill.
Stir-fry quartered brussels sprouts with beef and chilli for a healthy stir-fry.
Cook 4 slices of bacon or pancetta in a little olive oil until crisp. Add 500g of brussels sprouts and 100ml water. When sprouts are soft and/or water has evaporated, add a few pine nuts and freshly chopped herbs like parsley or chives. - Delicious with roasted lamb or duck!
