- 1x 500g packet of good quality dried pasta
- 25g chopped flat leaf parsley
- 100g parmesan cheese
- extra virgin olive oil
- salt and freshly ground pepper
- Bring salted water to the boil and add pasta.
- Cook until al dente and drain (but do not rinse).
- Spread over a flat tray and drizzle with olive oil.
- Heat sugo in a small pan with a good glug of extra virgin olive oil.
- Toss pasta through sugo with fresh parsley, salt and pepper.
- Add freshly grated parmesan and a final flourish if extra virgin olive oil to serve.
