Pasta with green tomato, verjuice & sultana sugo

Serves: 6
Maggie Beer, passionate foodie and supplier to THOMAS DUX Grocer recommends this recipe for the launch of her "Green Tomato, Verjuice & Sultana Sugo" - in stores from 5 September 2008!
  • 1x 500g jar of Maggie Beer "Green Tomato, Verjuice & Sultana Sugo"
  • 1x 500g packet of good quality dried pasta
  • 25g chopped flat leaf parsley
  • 100g parmesan cheese
  • extra virgin olive oil
  • salt and freshly ground pepper
  1. Bring salted water to the boil and add pasta.
  2. Cook until al dente and drain (but do not rinse).
  3. Spread over a flat tray and drizzle with olive oil.
  4. Heat sugo in a small pan with a good glug of extra virgin olive oil.
  5. Toss pasta through sugo with fresh parsley, salt and pepper.
  6. Add freshly grated parmesan and a final flourish if extra virgin olive oil to serve.
