Char Grilled Thai Beef Salad

Serves: 4, Preparation time: 10 minutes, Cooking Time: 5 minutes
  • 2 rump steaks, fat trimmed
  • 3 tbsp lime juice
  • 2 small red chillies, seeds removed and finely chopped
  • 2 tbsp caster sugar
  • 2 tbsp fish sauce
  • 1 1/2 tbsp soy sauce
  • 1 cup coriander leaves
  • 1 cup mint leaves
  • 12 fresh snow peas, ends trimmed, blanched
  • 1 red capsicum, finely sliced
  • 50g fresh bean sprouts, ends trimmed
  • 2 tbsp sesame seeds
  • 1 tbsp peanut oil
  • 1 clove garlic, crushed
  1. For the dressing, combine lime juice, chillies, sugar, fish sauce and soy sauce in a small bowl and set aside.
  2. Combine peanut oil and garlic and brush over the steaks.
  3. Heat a char grill pan or BBQ to high. Season the steaks with salt & pepper and grill for 2 minutes on each side until charred on the outside but still pink inside. Set aside for 5 minutes to rest.
  4. Place the coriander and mint leaves, snow peas, capsicum and bean sprouts in a bowl. Slice the steak, add to the bowl and add any meaty juices to the dressing. Toss the salad with the dressing and serve on a platter.
  5. Sprinkle with toasted sesame seeds.
