Parmesan & Rocket Frittata (quick cheating version)

Serves: 2; Preparation Time: 20 mins (this is a very quick recipe, recommended by our friend Geoff Jansz... he calls it the "Very quick Parmesan & Rocket Frittata Cheating Version"
  • 4 eggs beaten
  • 1/2 cup grated Reggiano parmesan
  • handful of rocket, roughly chopped
  • salt and pepper to taste
  • olive oil
  1. Mix all ingredients together except the olive oil.
  2. Heat a heavy based fry pan to quite hot and pour in a little of the olive oil, swirl around and then tip in about 1/3 of the egg mix.
  3. Swirl this around turn the heat right down and as it starts to firm, lift the edges with a thin spatula to make sure nothing is sticking. Here is the cheating bit: put a lid on the pan and let the top cook a little and slide it out onto a serving plate.
  4. Repeat this process until all the mix is used and each layer is placed on top of the preceding one. You end up with a frittata without having to flip anything!
  5. Serve with a simple salad and crusty bread.
