Serves: 2; Preparation Time: 20 mins (this is a very quick recipe, recommended by our friend Geoff Jansz... he calls it the "Very quick Parmesan & Rocket Frittata Cheating Version" - 4 eggs beaten
- 1/2 cup grated Reggiano parmesan
- handful of rocket, roughly chopped
- salt and pepper to taste
- olive oil
- Mix all ingredients together except the olive oil.
- Heat a heavy based fry pan to quite hot and pour in a little of the olive oil, swirl around and then tip in about 1/3 of the egg mix.
- Swirl this around turn the heat right down and as it starts to firm, lift the edges with a thin spatula to make sure nothing is sticking. Here is the cheating bit: put a lid on the pan and let the top cook a little and slide it out onto a serving plate.
- Repeat this process until all the mix is used and each layer is placed on top of the preceding one. You end up with a frittata without having to flip anything!
- Serve with a simple salad and crusty bread.
