Kensington Pride Mangoes
Mangoes are grown in most tropical countries and here they thrive in the Northern Territory, Western Australia, Queensland and New South Wales.The main variety grown in Australia is the Kensington Pride - a large orange mango, usually tinged with a red blush.
How to buy
Mangoes are available from October/November to February. Look for fruit that is well coloured and heavy for its size with a sweet aroma. Avoid mangoes with soft spots or bruises.
How to store
Ripen at room temperature out of direct sunlight for up to three days. Once ripe, eat immediately or store in the fridge.
How to prepare
Mangoes are usually eaten raw and can be sliced and added to salads and desserts, or blended with yoghurt and ice-cream to make a smoothie.

Great with basil, coconut, coriander, lemon grass, ginger, chilli, prawns, white fish, lemon, palm sugar, passionfruit, vodka, ice-cream, cream, honey, maple syrup, chicken, mint and lime.
