During World War 1, the wives, mothers and girlfriends of the Australian soldiers were concerned for the nutritional value of the food being supplied to their men. At first the biscuits were called Soldiers' Biscuits, but after the landing on Gallipoli, they were renamed ANZAC Biscuits.

 
 
 
 

Belinda's ANZAC Biscuits

Ingredients

  • 125g Butter, chopped
  • 2 Tablespoons golden syrup
  • 1/2 teaspoon bicarb
  • 2 Tablespoons boiling water
  • 1 Cup rolled oats
  • 1 Cup Plain flour
  • 1 Cup caster sugar
  • 3/4 cup coconut
  1. Pre heat oven to 180 degrees.
  2. Place Butter and Golden syrup in a pan stir over medium heat until melted.
  3. Place all ingredients in a large mixing bowl.
  4. Combine Bicarb and Boiling water and add to dry ingredients.
  5. Add golden syrup and butter and mix well.
  6. Drop rounded teaspoons of the mixture onto a greased tray and flatten slightly (allowing at least 5cm between each biscuit)
  7. Turn over down and bake at 150 Degrees for about 20 minutes or until golden brown .
  8. Cool on tray for 10 minutes before transfering onto a cooling rack.

Makes 25 biscuits!
