For a warming winter drink, add a sliced lemon and 2 cinnamon sticks to a large pot of black tea. Allow to steep for 5 minutes, then serve with honey, if desired.
 

Lemons

Member of the citrus family, lemons are an oval fruit with a marked point at one end. They have a yellow skin, with yellow flesh and an acidic juicy taste. Both the rind and juice of lemons is great for use in sweet and savoury recipes. The rind will impart a more intense flavour.

How to buy

Choose brightly coloured yellow lemons heavy for their size. Inspect closely for soft spots.

How to store

Store in a cool place. Lemons will deteriorate quickly if bought damp, however, will generally keep well in mild weather for about a week. In the fridge lemons with store for several weeks or juice can be frozen for use at a later date.

How to cook

Lemons are the ultimate ingredient for many savoury and sweet dishes. Lemon juice can also be used to keep the cut surfaces of apples, avocados, bananas and pears from turning brown.

BBQ pieces of succulent Thomas Dux Natural Beef and top with warm slices of lemon which have been caramelised in few drops of virgin olive oil.

Make a tangy carpaccio dressing by drizzling raw fish with olive oil and sprinkle with fresh herbs and lemon zest. Season with rock salt, ground pepper and with lemon juice before serving.

For a fresh lemon stuffing for fish, red capsicum or small butternut pumpkins, mix grated lemon zest and juice with fresh herbs, an egg and breadcrumbs. You can use cooked rice instead of breadcrumbs, if preferred.
