How to buy

Look for fresh, crisp-looking salad greens. The leaves should be free of any brown or yellow patches.

How to store

Store in a plastic bag in the crisper section of your fridge for 5 to 7 days.

How to cook

For a fresh salad, shred iceberg lettuce leaves then toss together with grated carrot and shredded red cabbage. Whisk together olive oil, lemon juice and a little sugar then drizzle over salad. Sprinkle with toasted sesame seeds then serve with fish or chicken.

To make san choy bau, cook 3 sliced shallots in a little oil until tender. Add 500g pork mince and cook until browned. Add 1 grated carrot, 1grated zucchini and 125g can corn kernels. Mix well then pour in 1/3 cup oyster sauce and 1/3 cup tomato sauce. Allow mixture to come to the boil then simmer for 2 minutes. Spoon mixture into iceberg lettuce leaves then wrap up and enjoy.
