Carrots

Carrots are a member of the parsley family, hence the fine leafy tops.

Carrots are not generally sold by varietal names, however, six varieties make up the main volume we see harvested each year.

How to buy

Select carrots which are firm and have a bright orange colour.

How to store

Store carrots in refrigerator crisper in a sealed plastic bag. Do not store near bananas, apples or melons to avoid the development of bitter compound.

How to cook

Carrots are a great addition to fresh juices. 2 apples, 1 carrot and 2cm piece ginger will make a refreshing drink, as well as supplying vitamins including beta carotene, which our bodies convert to vitamin A.

For a delicious winter side, glaze halved carrots with a mixture of honey and olive oil then roast until tender.
