Shallots

Shallots have green to white leaves with a slender white bulb. The flavour tends to be similar to an onion. Shallots are available all year round. In summer, thinly slice and use as a garnish, stirred through dips, or added to salads.

How to store

Wrap in damp towel and place in plastic bag. Store in the crisper section of the refrigerator.

How to cook

To use shallots as a garnish, cut shallots into 5cm lengths. Cut each length diagonally into thin strips. Drop into ice-cold water - the strips will curl up.

In winter, add shallot lengths to stir fries, or stir slices through soups and casseroles just before serving.
