Chef's Secret

You can make this dish for up to 1 hour ahead.

Strawberries in Balsamic Vinegar

Serves: 4; Preparation Time: 20 minutes
  • 2 punnets strawberries
  • 1/3 cup caster sugar
  • 2 tbsp Balsamic Vinegar
  • 4 tbsp clotted cream (or 100 ml pouring cream, 2 tbsp sugar & 1 tsp vanilla extract whipped together)
  • 2 tbsp flaked almonds
  1. Wash the strawberries and then dry thoroughly before you hull them (remove green bits).
  2. Combine with sugar and balsamic vinegar and refrigerate for no more than 1 hour otherwise they will go mushy. Stir once or twice along the way.
  3. Serve in chilled bowls with a dollop of clotted cream (or whipped pouring cream mix above), sprinkle with flaked almonds.
