Cook the Quinoa the same way as rice, either by the evaporation method or using a rice cooker. Add 2 cups of water and salt to 1 cup of Quinoa along with 1 tsp of olive oil. You will know the Quinoa is ready when the seed changes from white to translucent.
The next important step in cooking the Quinoa is to let it simmer (or rest) for about 5 minutes after cooking by evaporation or using the rice cooker. This way the Quinoa hydrates well and cools down a bit.
Once the Quinoa has cooled down: Add the tomatoes and cucumbers cut in cubes, as well as the parsley and garlic.
Add your favourite fruity olive oil and the lemon or lime juice and mix well. Season with salt & pepper if you wish.
