Sweet Potato, Spinach & Caramelised Onion Frittata
Serves: 4
- 10 eggs
- 1 onion, finely chopped
- 100ml balsamic vinegar
- 200g castor sugar
- 2 medium sweet potatoes, cubed
- a handful of (baby) spinach, chopped
- 500ml thickened cream
- a handful of parmesan cheese or crumbled feta
- Pre-heat oven to 160 deg.C.
- To create caramelised onion, cook chopped onion with balsamic vinegar and castor sugar until thickened to a jam-like consistency.
- Roast sweet potato. Line a medium sized tray with baking paper. Layer sweet potato, baby spinach and caramelised onion.
- Mix eggs with cream and pour over ingredients in try.
- Sprinkle with parmesan or feta cheese and bake for 25-30 mins or until set.
