Sweet Potato, Spinach & Caramelised Onion Frittata

Serves: 4
  • 10 eggs
  • 1 onion, finely chopped
  • 100ml balsamic vinegar
  • 200g castor sugar
  • 2 medium sweet potatoes, cubed
  • a handful of (baby) spinach, chopped
  • 500ml thickened cream
  • a handful of parmesan cheese or crumbled feta
  1. Pre-heat oven to 160 deg.C.
  2. To create caramelised onion, cook chopped onion with balsamic vinegar and castor sugar until thickened to a jam-like consistency.
  3. Roast sweet potato. Line a medium sized tray with baking paper. Layer sweet potato, baby spinach and caramelised onion.
  4. Mix eggs with cream and pour over ingredients in try.
  5. Sprinkle with parmesan or feta cheese and bake for 25-30 mins or until set.
