Lasagne with Italian Sausage
Serves: 6; Preparation Time: 30 minutes; Cooking Time: 1 hour, 20 minutes
- 1 tbsp olive oil
- 1 onion, finely chopped
- 4 cloves garlic, chopped
- 1 tsp dried oregano
- 1/4 tsp chilli flakes
- 375g Italian sausages, skins removed, meat crumbled
- 1 tbsp tomato paste
- 1 cup red wine
- 2 400g cans chopped tomatoes
- 300g packet Pastabilities lasagne sheets
- 6 cups grated mozzarella or pizza cheese
- 3/4 cup parmesan cheese
- Salt and pepper to season
- Preheat the oven to 180C
- Heat the oil in a large pan over a medium heat. Add the onion and stir while cooking for several minutes until softened.
- Add the garlic, oregano and chilli, cook for a further minute. Add the sausage meat and brown all over while breaking up with a wooden spoon.
- Add the tomato paste, red wine and tomatoes, season we1l and bring to the boil. Reduce heat to low and simmer for 20 minutes stirring from time to time to prevent catching.
- Spoon 1 cup of the sauce into the base of a greased 2 litre baking dish, cover with a layer of pasta sheets. Add 2 cups of the sauce and 2 cups of the mozzarella or pizza cheese and 1/4 cup parmesan. Continue layering pasta, sauce and cheese and finish with a layer of pasta and cheese. Cover with a sheet of baking paper then foil and bake for 1 hour.
- Remove foil and paper, and return to the oven for a further 20 minutes until bubbling.
- Leave to stand for 10 minutes before cutting and serving with a green salad.
