Cheese and Bacon Savoury Muffins

Serves: 12
  • 350g self raising flour
  • 1/2 tsp bi-carbonate soda
  • Salt
  • 4 rashers bacon, grilled and cooled
  • 2 tsp finely chopped chives
  • 50g parmesan, grated
  • 300mls buttermilk
  • 2 eggs, lightly beaten
  • 100g unsalted butter, melted
  • 150g cheddar
  1. Preheat the oven to 180C.
  2. Grease a 12 - hole muffin tin
  3. Sift the flour, bi-carb soda and a good pinch of salt into a bowl.
  4. Finely chop or process the bacon then stir into the flour. Add the chives, parmesan and nearly all the cheddar, leaving a little to sprinkle over the tops. Combine buttermilk, eggs and butter. Pour into the dry ingredients and fold together until just combined. Do not over mix.
  5. Spoon into the cases and sprinke tops with reserved cheddar. Bake for 25 minutes, until the skewer comes out clean.
  6. Serve warm with butter or with soups and casseroles
