Saskia Beer's Black Pig range

Thomas Dux Grocer now brings you a new range of artisan charcuterie, Saskia Beer's Black Pig products made from free range, heritage Breed Berkshire Pork - known as "Black Pigs" because of their characteristic black hair.

Berkshire free range pigs are sourced from small free range producers in the Barossa, Light and Southern vales districts of South Australia . Many of the pigs come from a stud farm that has been supplying champion Berkshire genetic to farmers all over the world for over 50 years.

Berkshire pigs have a higher intra muscular fat content and shorter muscle fibres - making them moist and tender. The nature of Berkshire fat is that it is high in essential omega acids and is very firm and there for prized for small goods. It has a very clean taste on the palate and is prized in Italian, Spanish and Japanese cuisines.

All salamis are air dried for a minimum of 3-4 months before release to develop their flavour. The hams, bacon and prosciutto are sugar cured using a recipe passed down through five generations of Barossa small good artisans.

Saskia Beer's Gourmet pies

Saskia's pies are made using her free range poultry and meats and mother Maggie Beer's famous sour cream pastry. Let's face it - when we think winter, we think pies - and what is wrong with the best meat in Australia slowly braised wrapped in sour cream pastry goodness? Absolutely nothing!

Saskia Beer has been farming free range produce in her Barossa Valley 'backyard' since 1996. All of Saskia's Barossa Farm Produce is ethically grown, and includes poultry, game and a range of hand-crafted charcuterie

Saskia Beer's Barossa chicken is where the story started 13 years ago and is still the mainstay of the brand. For that reason (because she has a lot of chicken) there are two chicken pies in the range - Chicken, Bacon & Mushroom and Chicken and Tarragon.

Also available is the new Beef and Burgundy pies and Saskia's traditional Pork Pies. As usual for the Beer family this pays serious homage to the Traditional English version while adding a touch of her own with the spicing mix. Saskia recommends serving with cornichons and a good chutney - keep it simple, they are just that good.
